Beef, pork & chive meatball Guinness pie

It’s British Pie Week so celebrating with our favourite original recipe – hearty beef, pork and chive meatball Guinness pie with parsley pastry!

Croque Monsieur

Ham + Gruyere + Dijon mustard + quality sliced white bread

Spread mustard on bread

Top with sliced ham & sliced or grated Gruyere

Top with another slice of bread

Butter both sides of the bread & place the sandwich in a hot ‘dry’ frying pan

Cook over medium heat (about 3-4 minutes)  or until golden brown on both sides

Make a thick Bechamel

Allow to cool

Spread bechamel on the top slice & sprinkle over more grated Gruyere

Grill under a medium heat until cheese has melted and is golden

& if you’re extra hungry, top with a fried egg for a Croque Madame!

Easy tarragon potted ham

Potted ham

Shred the meat of a cooked smoked or unsmoked gammon joint

Blend together the shredded ham + butter (at room temp) + Dijon mustard + white pepper in a food processor

When your desired consistency is achieved remove the blade from the processor bowl and stir in finely chopped parsley, chives & tarragon

Pack this mixture into ramekins

Top with clarified butter & chill ’til set

Ideal for a simple lunch, supper or dinner party starter!

Tomato pureé + oregano + olive oil + sea salt flakes

Mix together with some cold water to make a sauce

Spread over the base of your oven-proof dish

Drizzle over some more olive oil

Bake ’til cooked

Good with granary toast or home-made dough balls

Swap the ham for feta & add fresh chopped parsley/dill & black olives – serve with some warm pitta

Chorizo – two ways

Fry the chorizo whole or slice on the diagonalchorizo

Divide the fried chorizo in 2 portionschorizo

Fry the potatoes until golden + peppers + garlic +  fried chorizo + paprika + chilli

Tomatoes/onions/salt cod/pork can be added if you fancychorizo

Add water + salt + pepper

Cover and cook until the potatoes are tenderchorizo & water absorbed

Fry the  sliced chorizo in olive oil until golden & add some garlic & fry some more

Pour in the red wine + couple of bay leaves and braise until tender & wine reduced

Saturday sandwich – French salami + cheese + dressed spinach leaves

Cut off a chunk of bread from a square rustic loaf – as big as you like

Dress washed baby spinach leaves with a light Dijon mustard dressing

Lay a slice of  French Pavé peppercorn salami on the bread and top with the dressed spinach
