Melanzane alla parmigiana – Italian baked aubergines & Parmesan

 Slice aubergines lengthways 3-5mm thick
Dip slices in seasoned flour & then beaten egg
Shallow fry in olive oil until golden
Sauce: tomatoes + olive oil + garlic
Grated Parmesan (regular or veggie)
Sliced fontina or mozzarella
 
Spoon tomato sauce into overproof dish & layer with aubergines + fontina or mozzarella
Sprinkle with Parmesan + torn basil leaves – repeat layers finishing with tomato sauce + Parmesan (regular or veggie)
Bake @ 200C for 25-30 minutes
You can substitute aubergines with courgettes, peppers or even mushrooms!

Dress with chilli + lemon + garlic + cumin + coriander + olive oil dressing

Use any pizza dough recipe
Roll into a thin round 
Lamb + minced peppers + garlic + onion + chillies + tomato purée + dried mint + paprika + 
S & P
  Bake @ 220C for 15 minutes
 Tomato + cucumber + red onion + parsley + lemon juice + olive oil + S & P
 When cooked sprinkle over parsley and a squeeze of lemon

 Dried chillies + garlic + shallots + green olives + paprika + tomatoes
 Minced pork & beef + garlic + parsley + salt & pepper
 Pan-fried in olive oil until golden
Tip: why not make a double batch for the freezer
 
Patatas panaderas
Potatoes + green peppers + sliced garlic (& onions if you like) + olive oil + white wine + salt & pepper
 Bake until cooked through & golden
Tip: good with the olive meatballs orwith pan-fried chorizo/red pepper/chilli paprika oil and/or a fried egg!
